Passion Fruit Curd

.                                                                    1 big mason jar
1/2 cup of butter
400 g of pulp or 12 small fruits (you will only need the pulp)
6 eggs
2 cups of sugar

1. We will start by melting the butter in a metal bowl on a double boiler set at low.
2. In a separate bowl beat the eggs till "fluffy" add the sugar. Keep mixing slowly then add the pulp.
3. Once it is all mixed we will pour it in the bowl with the butter. Constantly stirring with a wooden spoon we will switch off the heat and mix in the butter with all the other ingredients
4. Slowly we will restart our heat keeping it on low and keep stirring till our mix is thick enough to spread.
5. Take the bowl off the heat and keep stirring till warm.
6. Place in a sterile jar, wait for it to cool down before placing it in the fridge. Good for 4/5 days!
