Ingredients2 eggs
2/3 cup of sugar
1tbs of lemon zest (1 lemon should do)
4 lemons juice
1/2 cup of butter
Method
- Set up your double boiler, in a pot place water to boil, now take a metal bowl that will fit over the pot. There it is a double boiler set up.
- While the water heats up remove the metal bowl and place your eggs in it. With a whisk beat it up till fluffy.
- Make sure your water is simmering but not over boiling, and place the bowl on top of the pot. Using a wooden spoon keep stirring
- Add the sugar, zest, and juice. Keep stirring as this will help your eggs not curdle.
- Once the foam goes away and you can see your bright yellow liquid add the butter and keep stirring. The heat will slowly melt it.
- Keep mixing till you liquid is denser and covers the back of your wooden spoon.
- Take the bowl off the heat and keep stirring till it cools off a little, then move to a jar and keep refrigerated.
It will last 7-10 days
