Lemon Tart


250g of cookies

1/2cup of butter for the filling

1/2 cup of butter for the crust

2 lemon

1/4 cup of hot water

4 eggs

1 1/4 sugar


1 cup of lemon curd for topping


  1. Turn your oven on at 350F. Crumble your cookies, I like to use a FP (food processor) for this. Once they are all crumbs add your melted butter and brown sugar. Mix butter and cookies and place them in the cake tin, push it down using the bottom of glass till it's all even then start pushing it on the sides, to create walls. Place the base in the oven for 15 min. 
  2. Clean your FP because we are going to need it. Take your lemons and cut them in 8 pieces each, place them in the FP and process, once it is liquidized add your water and process again. Strain and set aside the juice.
  3. Rinse your FP and place all your ingredients, mix till all is blended. just in time, take your crust out of the oven and pour the filling in and put it back in the oven for 30/40min or till center isn't liquid.
  4. Let cool and then cover with a layer of lemon curd.

Serve cold and add whipping cream on top or fresh berries for presentations.
