Oreo CheeseCake


Ingredients

                                                            9"-2"pan

300g double stuffed Oreo
85g of butter
1kg of cream cheese
275ml of whipping cream
95g of caster sugar
1tsp of vanilla
2 eggs
14 tbs of hazelnut-chocolate spread (4 for topping)
3tbs of whipping cream (topping)

Method

  1. First, we will separate the filling from the Oreos. Place the filling in a bowl and set aside.
  2. Take your cookies and crumble them. I use a food processor for this as I find it's easier.
  3. Once your cookies are crumbled add the melted butter and mix it's together. Place it in our baking pan. Using the bottom of a glass press down all the cookie to create the crust of our cheesecake. Bake the crust for 10 to 15 minutes at 350F.
  4. In a large bowl mix the cream cheese and heavy cream together. Whisk at high speed then slowly add the sugar, vanilla, and eggs. Once the mixture is all mixed we will divide it into two parts. (The two parts will not be equal but it will be 1/3 and 2/3).
  5. Mix together the 1/3 of cheesecake and the filling of the Oreos. This will be our first layer of cake, so place on our cooked crust.
  6. Take the 2/3 of the mixture and add the hazelnut-chocolate spread to it (if to dense add up to 2 tablespoons of whipping cream). With the help of a spoon and spatula add the 2/3 of the mixture on top of the one-third that is already in the baking pan.
  7. We will bake the cheesecake at 300F for 45 to 55 minutes. Once cooked we will switch off our oven but leave the cake in it for another hour then remove the cake from the oven and leave it to cool at room temperature. Once it has cooled we will place it in the fridge, so that it is the perfect temperature to serve. When you are about to serve mix the remaining hazelnut-chocolate spread with some whipping cream and whisk together till you have a nice spread to spread on top of your cheesecake.
