Passion Fruit Cheesecake


250g of biscuit 
1/2 cup of butter
4tbs of brown sugar
480g mascarpone
250 whipping cream
1 cup of sugar
1/3 cup of passion fruit curd for the filling 
1/2 cup of passion fruit curd for the topping


1.    Turn your oven on at 350F. Crumble your biscuits, I like to use a food processor for this. once they are all crumbs add your melted butter and brown sugar. Mix all three ingredients together and place them in the cake tin, push it down using the bottom of glass till it's all even then start pushing it on the sides, to create walls. Place the base in the oven for 10 min. 

2.    Pull out the base and let it cool down, then take a spoon of passion fruit curd and spread a thin layer on the base of our cheesecake.

3.    Next, we will start preparing the filling, it's very easy. Start by whipping the mascarpone, sugar, and 1/3 of curd in a big bowl. In a separate bowl whip up the whipping cream till you have stiff peaks, then fold it in with the rest of the filling.

4.    Place the filling in the base of the cheesecake and spread out till you have a smooth cake.

5.    Cover with the 1/2 cup of curd and let rest for 2h in the fridge.
