Asian Inspired Chicken Thighs

serves 6

1/2 cup of apple vinegar

 4 tbs honey

 1/4 soy sauce

 lemon juice (half a lemon)

 3tbs Asian general Tso sauce

 4 minced garlic cloves

 6 thighs

 2tbs sweet and sour sauce

 2tbs Worcestershire sauce

  1.  We will start with our glaze which just happens to be our marinade also. In a bowl mix all the ingredients together. (yes that simple!)
  2. Divide the liquid mix in 1/3 and 2/3. Use the 1/3 to marinade your chicken. (in this recipe I like to marinate the chicken thighs in a large zip lock bag)
  3. Leave the rest of the ''marinade'' to rest in the fridge just like the chicken thighs for about 45 min minimum (for grat flavor leave to rest overnight)
  4. Heat the oven at 400F and on greaseproof pan place your chicken and cover with foil. Put it in the oven (it will take ruffly 45/60 min to cook but we will keep coming back to it.)
  5. In a little pot pour the 2/3 of the marinade, cook at medium heat till it reduces to a thick but still liquid glaze.
  6. After 20 min of your chicken in the oven pull it out and brush over some of the glazes. Cover the chicken with foil and put it back in the oven.
  7. At 40/45 min take the chicken out and brush with more glaze, place it in the oven to cook for the last 10/15 min. For a nice crunchy feel broil at 400F for 5/10 min. Remember to keep your eye on it as it can burn easily!
  8. Take the chicken out of the oven and plait, if you happen to have more glaze leftover you can reduce it till it's thick and not liquidy (I would say 5/10 more minutes) and use it as a side sauce for the chicken.

Enjoy, Cassie ❤️
